Chocolate Zucchini Loaf

This is a very tasty, lower-fat recipe that becomes deliciously fudgey with the grated zucchini.

Makes 8 servings

1/2 cup whole wheat flour
3/4 cup white flour
1 cup sugar
1/4 cup cocoa powder
3/4 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
2 tbsp corn starch
1/4 cup water
1 cup zucchini, grated
1/4 cup almond milk, or similar
1/8 cup canola oil
1/4 cup unsweetened applesauce
1 tsp vanilla extract
1 tsp white vinegar


  1. Preheat oven to 350 degrees. Lightly grease or spray loaf pan.
  2. If you haven’t already, grate the zucchini. You’ll need about 1 small-medium zucchini.
  3. In a medium mixing bowl, stir together corn starch and water. Add grated zucchini, almond milk, canola oil, applesauce, vanilla and vinegar. Stir.
  4. In a large mixing bowl, combine flour, sugar, cocoa, baking powder, salt and cinnamon.
  5. Pour wet ingredients into dry and stir until thoroughly combined. Pour into greased pan and bake for approximately 50 mins. Do fork test to see if done.
  6. Allow to cool most of the way before serving. Slice into 8 pieces.

About 223 calories, 4 grams of fat, and 2.7 grams of protein per 92 gram serving.
