Bruschetta Sandwiches

Ingredients:Bruschetta Sandwich
1 small head green leaf lettuce, washed and torn
2 red onions, peeled and halved
1 pint grape tomatoes
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
sea salt and freshly ground pepper, to taste
4 slices Tofutti cheese (optional)
8 slices whole grain bread, toasted

Directions:

  1. Using a food processor with the S-blade attachment, pulse halved onions with garlic powder, Italian seasoning, salt and pepper for a few seconds to break up.
  2. Add lettuce, grape tomatoes and olive oil and pulse for 1-2 seconds about 4-5 times to chop and combine ingredients.
  3. Serve immediately on toast with a slice of Tofutti cheese.
    This would probably also be good with any other green leafy veggie that can stand up to a few seconds in the food processor without turning to mush, such as spinach.

Makes 4 generous servings (sandwiches).
