Tangy Tatsoi with Cashews

I tried the tatsoi from last week’s CSA bin in a green smoothie, but the flavour was a bit strong for my taste.  This week I decided to try cooking it.  The result was delicious, but I wasn’t expecting it to taste so good, so unfortunately I did not measure or take pics.  So, measurements are approximate.

1 bunch organic tatsoi, chopped (can probably sub spinach)
2 small white onions, halved and sliced
handful cashews
non-stick cooking spray
2 tbsp lemon juice
1 small squirt Braggs or tamari
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tbsp almond butter

  1. Sautée onions in pan sprayed with non-stick spray over medium heat for a couple minutes, until slightly softened.
  2. Add cashews, and a squirt of Braggs.  Sautée for another minute or so.
  3. Add in lemon juice and spices, mix.
  4. Stir in chopped tatsoi and continue sautéeing until leaves are softened.
  5. Remove from heat and stir in almond butter to thicken up the sauce. Serve.
