Low-Fat Microwave Spelt Brownies


91 g silken tofu (1/4 cup)
1/2 cup sugar
2 tbsp unsweetened cocoa powder
pinch salt
1/2 cup spelt flour


  1. In a blender combine tofu, sugar, cocoa and salt. Mix on low speed until combined. Gradually add in flour until thoroughly mixed.
  2. Spray a microwave safe dish with canola oil spray and pour brownie mix into the pan (or bowl).
  3. Microwave on high for 4-5 minutes depending on power of microwave.
  4. Serve warm.

Warning: If you have leftovers–keep them covered with plastic or else they go rock hard.

Servings: 4

Approximately 164 calories and 1.1 grams of fat per serving.
