Crunchy Nacho Salad


1/4 cup quinoa, uncooked
1/4 cup water
14 grams tortilla chips (approx. 5)
5 tbsp salsa
2 cups organic field greens salad mix


  1. Bring quinoa and water to a boil in a small pot.  Turn down to simmer and cook for approximately 15 minutes or until water is absorbed.  Fluff with fork.
  2. Put salad greens in a large bowl and top with quinoa, crumbled tortilla chips, and salsa.  Serve.

Servings: 1

Approximately 261 calories and 6.3 grams of fat per serving.
