Toasted Sesame Kale and Quinoa

Ingredients:Toasted Sesame Kale and Quinoa (Thumb)

1 2/3 cups water
1 cup quinoa, uncooked
2 cups kale, chopped very small, tough stems discarded
1 carrot, chopped into small (1/2 cm) pieces
4 cloves garlic, minced
3 tbsp sesame seeds, toasted
2 tbsp tahini
2 tbsp lemon juice
1/2 cup water
1 tbsp toasted sesame oil
1 pinch of salt


  1. In one pot, simmer quinoa and minced garlic in water with a tight-fitting lid until light and fluffy (20-30 mins.)
  2. In another pot, steam the carrots and kale with a small amount of water for 5 minutes.
  3. In a small bowl, stir together tahini, lemon juice and sesame oil.
  4. Once the quinoa is finished cooking, stir in the tahini, lemon juice, and sesame oil.  Then, stir in the kale and carrots.
  5. Scoop into serving dishes and top with toasted sesame seeds.

Servings: 4

Approximately 300 calories and 13.2 grams of fat per serving.
