Quinoa Guacamole Salad

1 3/4 cups waterQuinoa Guacamole Salad
1 cup quinoa, uncooked
2 cloves garlic, minced
2 hass avocados, ripe, chopped into chunks
1 small tomato, chopped
1 small white onion, chopped
1 tbsp. lemon juice
1 tbsp. lime juice
1 tsp. olive oil
1/2 tsp salt

  1. In a rice cooker or pot over low heat, combine water, uncooked quinoa, salt and minced garlic. Cook covered, stirring occassionally (especially if cooking on stove) until water is absorbed and quinoa is fluffy, about 20-30 minutes. Remove from heat.
  2. While allowing quinoa to cool to about room temperature, cut up avocadoes, onion and tomato if you have not already.
  3. Pour cooked quinoa into a medium serving bowl. Add avocado, onion and tomato. Drizzle olive oil and juices on top, and stir together.
