Cheezy Trees and Potatoes

4-6 potatoes, sliced thinly
1 cup broccoli florets
1 small white/yellow onion, chopped
1 tablespoon tamari (soy sauce) + 2 tablespoons water
2 tablespoons flour
2 tablespoons garlic powder
1 ½ cups soy milk
½ cup nutritional yeast
salt, to taste (lots is good!)

  1. Preheat oven to 375 degrees fahrenheit.
  2. Spray or oil lightly 8×11 casserole dish. Arrange potatoes and broccoli in layers.
  3. Sautee onions in tamari and water mixture in a saucepan over medium heat for 3-4 minutes.
  4. Stir in flour and continue cooking for another minute. Add soy milk, garlic powder, nutritional yeast and salt and continue cooking until it begins to thicken (about 3-4 more minutes) then remove from heat.
  5. Pour liquid over broccoli and potatoes. If there is not enough to mostly cover vegetables, add a bit of water.
  6. Cover with aluminum foil and bake for one hour. Allow to cool uncovered for about 15 minutes before serving.
